Could I just do this myself?
You could, and there are templates online. Most owners never get to it because they are time poor, and it is hard to see your own business from the outside. An experienced sales interviewer asks the questions you would not think to ask yourself.

Yes. There is a free 15-minute fit check before you buy. After that, the 90-minute interview is the deep discovery, and that is where most of the value is.
